I recently learned about Holiday make-ahead meals and quick and easy recipes on a blogger trip.
One of the tips I learned was making caramelized onions in the slow cooker. Perfect for making french onion soup, sliders and all kinds of other dishes including this New Potatoes with Sweet Brown Onions dish I was inspired by. I wanted to recreate it for my family for the holidays with a Latin twist!
I went to Walmart to shop for all my fresh veggies and of course Smoked Bacon at an affordable price. Clearly all my shopping was done at the one stop shop. I scheduled to make every part of this recipe ahead to just whip up together in less than 10 minutes for the big day—Thanksgiving!
Ingredients:
12 Red Small Potatoes
6 pieces Smoked Bacon
1 stick of Butter
Splash Balsamic Vinegar
1/8 cup Honey
2 tbs Chives
Queso Fresco
1/2 cup Caramelized Onions

Thinly slice 6 medium yellow onions add to slow cooker with 1/4 cup of olive oil and salt to taste. Cook on low for at least 7 to 10 hours or until transparent and soft. Store in a container, refrigerate or freeze until ready to use.
Make- Ahead Roasted Red Potatoes
Butter an oven safe dish and add red potatoes in halves with mini cubes of butter. at least 1tbs of butter. Salt and Pepper to taste. Cook at 400 degrees until tender. This will range on size of potatoes it can be as little as 25mins to 45 mins
If you didn’t have any bacon left over from breakfast now is the time to cook a few slices and store for later use.
Store your Make-Ahead Recipe Ingredients
Using plastic containers and plastic bags for easy storing. Place a napkin in with your bacon to keep it from absorbing the grease.
Ready to Cook
Combine 1/2 cup of caramelized onions, 1/8th of Honey, at least 3 slices of bacon cooked and chopped, splash of balsamic vinegar. Cook until liquid thickens.
While you wait for toppings to cook, heat your potatoes.
Ready to Serve
Serve potatoes in a dish top with your make-ahead caramelized onions, chopped chives and queso fresco cubes.
