Simple Cookie Recipes for the Holidays

During a recent visit to Smucker Headquarters I learned all about hosting a cookie party While I have yet to host my own, my family has been very happy with all the simple cookie recipes i've been baking at home. 

I am happy I was able to learn a few new recipes that pushed me out my comfort of baking and allowed me to get creative for the holidays. 

Holiday cookies

During my trip I learned that Smuckers owns Pillsbury dry ingredients. This includes funfetti mixes as well as sugar cookie and frostings! We used many of their products to create cookies for a cookie party. Here are my favorites we a few of my new ones perfect for the holidays!

This was one of the easiest cookies. Its your basic sugar cookie mix or use (Pillsbury Funfetti sugar cookie mix) divided in three and dyed to your color preference. Since it's Christmas time we used green and red and one plain. We assembled balls and rolled out the dough. Using cookie cutters we spelled out joy!

Joy Cookies

Makes: 30 cookies |Preparation Time: 40 Minutes | Cooking Time:10 Minutes

Ingredients
1 (17.5 oz.) package Pillsbury® Funfetti® Sugar Cookie Mix • 3 tablespoons Pillsbury BEST® All Purpose Flour • 1/2 cup butter, softened or slightly melted • 1 large egg • Red and green food colors

Directions
1. HEAT oven to 375°F. Combine cookie mix, flour, butter and egg in medium bowl. Stir until soft dough forms. Divide dough into thirds; place each portion into separate small bowl. Tint one dough portion with red food color and one with green food color.
2. ROLL dough into 1-inch balls. Place one of each colored ball onto floured surface with dough pieces touching. Roll out dough to 1/4-inch thick. Make cut out at center of dough where all colors meet with letter shaped cookie cutter. Remove to baking sheet. Reroll remaining dough gently. Cut another cookie from center of reshaped dough.
3. Place 2 inches apart on ungreased baking sheet. Repeat with remaining dough balls.
4. BAKE 8 to 10 minutes or until edges are light golden brown. Cool 2 minutes on baking sheet. Remove to wire rack to cool completely.

Another classic the Sandwich Cookie. This one is filled with frosting and rolled in festive sprinkles.
Try this Holiday Funfetti Sandwich Cookie  or try it with my twist using JIF Whips- Peanut Butter and Chocolate Mint

Follow the same steps to make the cookie but instead of filling with frosting use the JIF whips in the limited flavor of MINT!  Finish it off with a roll in some sprinkles and it's just as delicious!

These cookies were so delicious and so easy to make. I loved how simple they were to make yet the variety using Smucker's preserves is endless!

Classic Thumbprint Cookies

Makes: 4 Dozen | Preparation Time: 40 Minutes | Cooking Time:  17 Minutes

Ingredients
·         Crisco® Original No-Stick Cooking Spray ·   1/2 cup firmly packed brown sugar ·  1 Crisco® Baking Sticks Butter Flavor All-Vegetable Shortening, cut into slices ·   OR 1 cup Crisco® Butter Flavor All-Vegetable Shortening ·   3 large eggs, separated ·    2 tablespoons water ·   1 1/2 teaspoons vanilla extract ·    1/4 teaspoon salt  ·   2 cups Pillsbury BEST® All Purpose Flour ·     2 cups finely chopped pecans ·   1 cup Smucker's® Strawberry Preserves, or any Smucker's® Preserves, Jam or Jelly

 Directions
1. HEAT oven to 350°F. Adjust rack to middle position. Coat two cookie sheets lightly with no-stick cooking spray.
2. BEAT brown sugar and shortening in medium bowl with an electric mixer at medium speed for 2 minutes or until fluffy. Scrape down sides of bowl. Add egg yolks, water, vanilla and salt. Beat until well combined. Add flour on low speed until well blended.
3. BEAT egg whites in a shallow bowl until foamy. Place pecans in a separate shallow bowl. Measure about 2 teaspoons dough for each cookie. Roll into balls. Dip each dough ball into egg whites, then roll into pecans. Place on prepared cookie sheet. Using the back of a teaspoon or your thumb, make a rounded indentation in the top of each cookie.
4. BAKE 10 minutes. Remove from oven. It may be necessary to create the indentation once again with a spoon. Place about 1 teaspoon preserves into the indentation of each cookie.
5. Bake an additional 5 to 7 minutes or until lightly browned. Remove from oven. Cool on baking sheet for several minutes. Remove to wire rack to cool completely.

sugar cookie mug toppers

This recipe is more about learning a technique if you will. Any cookie shape that is wide enough or large enough to hang on your mug can be transformed into a Mug Topper. The idea is to cut an area wide enough and deep enough for your cookie to hang off your mug.

Using the Joy Cookie recipe minus the dye job (though you can totally color these as well)

I made star shaped cookies. Before placing on a baking sheet, I used a butter knife to cut a rectangular shape down the middle. The trick is to make wide enough to fit on a mug and long enough for it to sit.

I baked accordingly and let them cool before I decorating.

We also tried making gingerbread kids.  The kids loved these the best!
They even decorated their gingerbread kids. The steps were the same cutting rectangles before baking!

Then it was off to enjoy! Delicious!
