During the winter I try to make easy meals for the family. I stay home with the kids but i'm a working mom so making meals from scratch all the times can be hard. I love my slow cooker and really  it can't get easier than a slow cooker recipe! Sadly there are hardly any Mexican dishes cooked in the slow cooker so I decided to make chicken mole! The results were fantastic!

To make this easy slow cooker recipe you will need:

TIP: Check your mole at the middle mark of cooking an approximate 2.5-3 hours into cooking. Give it a stir. If it seems too think add about 3/4 of chicken broth, mix and cover.
6- Your chicken mole is done when the chicken is tender and can easily be shredded with your utensil.

We recommend this dish served with a Mexican Rice.

  4. I love adapting traditional recipes we grew up eating and making them work for us by using modern tools like the slow cooker! I've done that with a few Puerto Rican dishes too! ;) Question because I'm absolutely unfamiliar with mole - is it spicy, sweet, or what type of taste does it have?

    1. Melanie I love that! Mole is a little spicy but def has sweet flavors. Some people add more chocolate I don't like mine too sweet so I leave it as is. It reminds me of a thick spicy gravy texture. It's really good You can find Mole Doña Maria at your local Walmart!
